Starting November 2014 Eden Creamery, LLC a spin-off Goshen Farm, LLC. Eden Creamery's new facility is now ISDA Certified as Cheese Processing Plant and Grade A Dairy. The new facility has a fully automated Parlor, connected via pipe-line to a 130g bulk tank, which is connected to a cheese making room. It also has an aging room that will allow us to age various cheeses from a few days to few years. Goshen Farm will continue to supply milk to Eden Creamery. Sheep Milk will be supplied by Blue Sage Farm.
Artisan Goat Cheese
Goat cheese has a very distinctive flavor and aroma that is much appreciated by “Cheese lovers.” Many cow cheese makers may try to imitate the flavor and aroma that is naturally present in goat and sheep Cheese. Goat cheese is known to be a healthier cheese since goat's milk contains short-chain fatty acid and smaller fat globules giving goat cheese a unique flavor and aroma as well as making the cheese and milk easier for the body to digest.
The quality of cheese is dependent on the quality of the milk. Milk quality is affected by the quality of the feed, animal health, handling of the milk, and the overall welfare of the animal. Here at Goshen Farm the goats graze on a well maintained pasture and hay that is produced on the farm. Goats are fed sprouted barley in replace of grain. Herbs used in our cheese making are grown on the farm. We strive to use organic or natural ingredients.
To produce a pound of cheese the cheese maker may need to use over a gallon of milk. The harder the cheese, of course, more milk may need to be used. Depending on the cheese type it can take from several hours to a few days for the cheese process. For aged cheeses there may be several months to over a year of "aging." As the cheese ages it develops its texture and aroma.
Artisan cheese, as the name suggests, provide unique characteristics to the cheese- with lots of creativity and passion. Expect to see variations in shape, flavor, texture packaging, etc. For commercial cheeses the cheese maker may introduce various methodologies including not so desirable ingredients to make the cheese consistent over seasons and various sources of milk. While the Artisan cheese maker may try to change the process or just allow these variations to occur. We are encouraging our customers to get involved with the farm and provide feedback. We’ll try to provide useful information, recipes and various suggestions for each cheese type.
To keep cheese fresh refrigerate at 34 degrees F and in a suitable cheese container (avoid adding any moisture).
