Some Facts, Gelato Vs. Ice-Cream Vs. Eden Gelato
Gelato is served at ~10F warmer than ice-cream, which is more pleasant to consume since it doesn’t freeze the palate and feel more rich in flavor and texture than ice-cream. Has less fat content, below 10%- when done right!!!. More dense, smooth and very pleasant and delicate texture.
Unfortunately, some commercial gelato makers does not follow the main principle of gelato making and follow a process that is very similar to ice-cream, adding some artificial ingredient to make it “shine” and “gummy” like texture may look good but taste?
Ice-Cream, legally must be higher than 10% Fat and many goes over 40%. Ratio milk to cream, using more Cream than Milk to achieve the high % fat.
“Real” Gelato, should be less than 10% Fat, ratio milk to cream should be more milk than Cream. Although most commercial Gelato still using high content of Cream
Eden Creamery Gelato, using goat milk which has smaller fat globules naturally homogenized, very similar in structure to human milk, which is more compatible with human digestion than cow’s milk. We may add some 100% natural plants oil, which still results in ~6-8% total fat.
Milk if frozen will turn into a hard ice, in addition, the water and the fat in the milk needs to be dispersed evenly throughout the mix. To prevent icing and disperse fat and water throughout the mix both ice-cream and gelato make use of stabilizers and emulsifiers. There are many options and variations of stabilizers and emulsifiers, natural and chemicals. You can find these ingredients in any commercial ice-cream container, example: eggs, guar gum, cornstarch, and various gums that comes from natural plants like guar gum that is extracted from guar beans, Locust bean gum comes from the seeds of the Carob tree, and others…
Eden Creamery gelato uses only natural emulsifiers and stabilizers, no eggs are used.
During the making of the ice-cream the manufacturer can select the amount of air that is introduced into the ice-cream, the term is overrun. High quality ice-cream and gelato using less air which results in a harder consistency more air will increase volume (more economical…) and more fluffy. Typical ice-cream will have overrun of 50% or higher which means that 50% of the volume is air. Gelato and higher quality ice-cream will use over-run of ~25%.
