It is a Spanish type cheese, aged for a minimum of 60 days. Manchego has a firm and compact consistency, buttery texture and piquant flavor. Traditionally it is made using Sheep Milk, but at Eden Creamery we make it using either Sheep or Goat milk. Using sheep milk- the cheese will have a white-yellow color; while using Goat Milk will result in a whiter color.
